Quinoa-Stuffed Bell Peppers
A colorful and hearty dish bursting with protein-packed quinoa, fiber-rich black beans, and vibrant veggies. A perfect balance of flavor and nutrition in every bite!

Ingredients:
4 bell peppers (any color)
1 cup cooked quinoa
1 cup black beans, drained and rinsed
1 cup diced tomatoes
½ cup corn
1 small onion, diced
2 cloves garlic, minced
1 tsp cumin
½ tsp paprika
¼ tsp sea salt
¼ tsp black pepper
¼ cup shredded cheese (optional)
2 tbsp fresh cilantro, chopped
Instructions:
Preheat oven to 375°F (190°C).
Cut the tops off the bell peppers and remove seeds.
In a pan, sauté onion and garlic until fragrant.
Add quinoa, black beans, tomatoes, corn, and spices. Stir well.
Stuff the mixture into the bell peppers and top with cheese (if using).
Bake for 25–30 minutes. Garnish with cilantro before serving.
