Lemon Herb Grilled Salmon with Roasted Vegetables
Tender, flaky salmon infused with zesty lemon and aromatic herbs, served with a side of perfectly roasted seasonal vegetables. A light yet satisfying dish!

Ingredients:
4 wild-caught salmon fillets
2 tbsp extra virgin olive oil
Juice of 1 lemon
2 cloves garlic, minced
1 tsp dried oregano
1 tsp dried thyme
½ tsp sea salt
½ tsp black pepper
2 cups broccoli florets
1 cup cherry tomatoes
1 zucchini, sliced
1 red onion, sliced
Instructions:
Preheat grill to medium heat.
In a bowl, mix olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
Brush salmon fillets with the mixture and let marinate for 10 minutes.
Grill salmon for 4–5 minutes per side.
Toss vegetables with olive oil, salt, and pepper, then roast in the oven at 400°F (200°C) for 20 minutes.
Serve salmon with roasted vegetables.
