Energy Balls
A great on-the-go snack packed with fiber, protein, and healthy fats.

Ingredients:
1 cup dates (pitted and soaked for 10 minutes if dry)
½ cup almonds or walnuts
2 tbsp chia seeds or flaxseeds
2 tbsp shredded coconut
1 tbsp cocoa powder (optional)
1 tsp cinnamon
Instructions:
Prepare the ingredients: If the dates are dry, soak them in warm water for 10 minutes, then drain.
Blend: In a food processor, blend nuts until finely chopped. Add dates, chia seeds, cocoa powder, cinnamon, and coconut. Blend until the mixture becomes sticky.
Shape the balls: Using your hands, scoop out a tablespoon-sized portion and roll it into a ball.
Refrigerate: Place them on a plate or in a container and chill in the refrigerator for at least 30 minutes.
Store: Keep in an airtight container in the fridge for up to a week.
