Energy Balls

A great on-the-go snack packed with fiber, protein, and healthy fats.

Ingredients:

  • 1 cup dates (pitted and soaked for 10 minutes if dry)

  • ½ cup almonds or walnuts

  • 2 tbsp chia seeds or flaxseeds

  • 2 tbsp shredded coconut

  • 1 tbsp cocoa powder (optional)

  • 1 tsp cinnamon

Instructions:

  1. Prepare the ingredients: If the dates are dry, soak them in warm water for 10 minutes, then drain.

  2. Blend: In a food processor, blend nuts until finely chopped. Add dates, chia seeds, cocoa powder, cinnamon, and coconut. Blend until the mixture becomes sticky.

  3. Shape the balls: Using your hands, scoop out a tablespoon-sized portion and roll it into a ball.

  4. Refrigerate: Place them on a plate or in a container and chill in the refrigerator for at least 30 minutes.

  5. Store: Keep in an airtight container in the fridge for up to a week.
