Avocado & Kale Salad with Lemon-Tahini Dressing

A refreshing and nutrient-dense salad loaded with creamy avocado, crunchy sunflower seeds, and a zesty lemon-tahini dressing. Perfect as a side or light meal!

Ingredients:

  • 4 cups kale, chopped

  • 1 avocado, sliced

  • ½ cup cherry tomatoes, halved

  • ¼ cup sunflower seeds

  • ¼ cup feta cheese (optional)

Dressing:

  • 2 tbsp tahini

  • 2 tbsp lemon juice

  • 1 tbsp apple cider vinegar

  • 1 tbsp extra virgin olive oil

  • ½ tsp maple syrup

  • ¼ tsp sea salt

Instructions:

  1. Massage kale with a little olive oil to soften.

  2. Add avocado, tomatoes, and sunflower seeds.

  3. Whisk dressing ingredients and drizzle over the salad.

  4. Toss and top with feta cheese (if using).
